Particularity

Procédé Anaérobique: Procédé expérimental de plus en plus présent sur le marché du café de spécialité (plus cher et complexe à maîtrisé). Consiste à enfermer les grains de café, ici les cerises de cafés comme c'est un Naturel Anaérobique, dans une cuve et d'y enlever l'oxygène pendant plusieurs jours, puis les faire sécher. Tasse intensément fruitée et florale dû au fait que la fermentation pénètre jusqu'à l'intérieur du grain.

STORY

We are absolutely delighted to continue our purchasing relationship with the remarkable Volcan Azul farm for a 4th year. Alejo is the fifth generation of the Castro-Kahle family, who have been growing coffee on the side of the Poas Volcano in central Costa Rica for over 100 years. They work with more than twenty varieties including Caturra, Catuai, Villa Sarchi, Geisha, SL28, Mokha and Rume Sudan. Alejo is an extremely passionate and knowledgeable coffee farmer. He is constantly experimenting with new varieties and less conventional processes with the aim of producing some of the best coffees in the world. His fermentation techniques are always carried out with great precision and intention and put forward a lot of clarity of flavors. In addition to their pursuit of quality, the family has chosen to retain some 200 hectares of forest located above their coffee plants in order to preserve local biodiversity. Alejo is convinced that the forest preserved in this way allows its coffee trees to benefit from a unique microclimate: a light damp veil sweeps the farm every day, even in the dry season.
