Particularities
Procédé Naturel: Le procédé le plus ancien et écologique de tous et fonctionne principalement en climat sec. Les cerises sont d’abord cueillies à pleine maturité, lavées et tout de suite étendues sur des patios ou des lits de séchages. Le grain reste à l’intérieur du fruit qui fermente et sèche pendant une période de 3 à 4 semaines. Il est ensuite dépulpé afin d’obtenir le grain. Demande une grande expertise et savoir-faire. Il en résulte une tasse sucrée aux notes intenses de confiture de fruits ainsi qu’une texture sirupeuse.

We are absolutely delighted to continue our purchasing relationship with the remarkable Volcan Azul farm for a 4th year. Alejo is the fifth generation of the Castro-Kahle family, who have been growing coffee on the side of the Poas Volcano in central Costa Rica for over 100 years. They work with more than twenty varieties including Caturra, Catuai, Villa Sarchi, Geisha, SL28, Mokha and Rume Sudan. Alejo is an extremely passionate and knowledgeable coffee farmer. He is constantly experimenting with new varieties and less conventional processes with the aim of producing some of the best coffees in the world. His fermentation techniques are always carried out with great precision and intention and put forward a lot of clarity of flavors. In addition to their pursuit of quality, the family has chosen to retain some 200 hectares of forest located above their coffee plants in order to preserve local biodiversity. Alejo is convinced that the forest preserved in this way allows its coffee trees to benefit from a unique microclimate: a light damp veil sweeps the farm every day, even in the dry season.
