Brewing Recipe

18g

320g volume in cup

Brewing time: 3:20 min

The bean

Producer : Alejo Castro

Region : West Valley

Country : Costa Rica

Elevation : 1500 masl

Variety : San Isidro

Process : Natural

Particularities

The natural process, also known as the dry process, is a crucial aspect of coffee production in Costa Rica, and Volcan Azul's most prized coffees very often use this process. On the farm, the fruit is picked at its optimum point. They are then spread out on a raised bed and dried in the sun. This drying process lasts 9 days, giving the coffee time to slowly lose moisture and develop its unique profile. Following this initial drying period, the coffee moves on to another stage known as mechanical drying in Guardiolas for 24 hours. This ensures uniform drying and further stabilizes the coffee grians.

History

Alejo is a 5th generation producer in a line of excellence in coffee production that began almost a century ago. Volcan Azul cherries are dried under the Costa Rican sun in a natural process that brings intense red fruit notes to each bean. An additional day of mechanical drying, in guardiolas, brings additional control to this process, increasing the consistency of the results. Its vibrant acidity is balanced by sweet notes and a silky, smooth body. This coffee is the result of a century of family tradition and commitment to quality and sustainability. Volcan Azul's volcanic terroir and impeccable processes consistently produce exceptional coffees. Join us in celebrating this wonderful relationship with Alejo and his dedication to quality in coffee.
