Coffee blossom honey Ana Ortega (12oz)

15.95$

This superb microlot of coffee blossom honey comes to us from Finca Los Angeles in Huehuetenango, Guatemala.

Ana Maria Ortega grew up with bees. The beehives were very close to the family home and she remembers consuming the rich sticky liquid as much as smelling the delicious scent of the coffee flowers. Her father lovingly kept the apiary. But when she was only 17, both of her parents died tragically. The farm is now hers, and she poured her grief into running Finca Los Angeles, waking up before dawn to pick and process coffee cherries and raking the parchment after dark. But the hives almost died out because Ana Maria did not know how to take care of them. It is thanks to the advice of her neighbors and several years of hard work that she now understands how to successfully establish a partnership between her coffee trees and the bees. She is very proud to share this delicious honey.

Notes:

Crystallization: Three things make honey more likely to crystallize:

  1. 1. Temperature below 50ºF (10ºC)
  2. 2. The ratio of glucose and fructose in the honey
  3. 3. Pollen content

To turn your Coffee Blossom Honey back into a smooth liquid put your honey in a vessel of warm water and allow it to slowly liquify.

Note: Raw honey is not suitable for infants.
