Particularities

After sorting, the cherries are sun-dried on raised beds for 36 to 72 hours. These allow air to circulate freely, resulting in uniform drying and preventing defects that may be due to poor fermentation. After fermentation, they are pulped and the grains are dried again until they reach a moisture content of 10-12%, which takes between 10 and 22 days.

History

This coffee comes from a washing station in the village of Shantawene, which lies between the village of Bombe and the mountain of the same name. The producers are members of an organization of over 600 members located in various parts of the mountain range surrounding the village. All coffees are hand-picked and carefully sorted. Thanks to the high altitude of the coffee plants, the beans are dense and uniform, reducing the number of beans to be eliminated during sorting. This batch of natural coffee offers a delicate, pleasantly sweet cup with notes of candied apple, honey and jasmine. The perfect afternoon coffee to warm up this winter.
