OSCAR & LUIS MONGE

Back for a fifth consecutive year, it is a privilege to reintroduce a microlot from the Monge Ureña brothers on our menu. It was on our very first trip to Costa Rica in 2017 that we selected a lot from their farm through dozens of samples. Since then, we have had the chance to visit them multiple times and roast several of their exceptional lots over the years.

La Lia was built in 2007 as part of a movement called " the micro-mill revolution" in Costa Rica. In the early 2000's, a few farmers started wet milling and drying their coffee themselves in order to add value to their product. In the older model, the farmers were delivering coffee cherries to a larger co-ops or mill, where they were often blended to form larger lots. This meant that they were dependent on the commodity market for prices and losing traceability and value. There are now more than 200 micro-mills in Costa Rica and the demand for quality micro-lots keeps growing

The lot that we have selected this year comes from one of their farms called Santa Rosa. This is a 100% Catuai variety lot, cultivated at 1900 meters above sea level, the highest point on their land. It is processed as a white honey, a hybrid between the washed and the natural method where the dry parchment is coated with part of the pulp. The result is a very sweet and coating filter with notes of hazelnut butter and nougat as well as a citric acidity that makes us think of a juicy clementine.

 

PATRICIA PEREZ

We are pleased to present a beautiful coffee from the Honduran producer Israel Ramirez once again. Israel is the eldest son of Antonio Ramirez, the patriarch of the Los Ramirez group and a true community leader. He started growing coffee in 1990, just 5 years after his father Antonio planted his first crops in Selguapa. Like many members of the Los Ramirez clan, he started his farm from seeds of Typica and Bourbon offered by Antonio.

Until 2018, the group of 25 small producers sold their coffee in cherries to local intermediaries, until they took the initiative to process their coffee themselves and produce high-quality microlots for the specialty coffee market. This new model now allows them to earn more than 3 times the average local price. Israel recently invested in its drying facilities and its focus on improved fermentation and cooler, slower drying times has resulted in a more complex cup.

Deeply sweet and vibrant, this Typica lot presents light floral aromas as well as butterscotch and tropical fruits flavors. We’d like to thank Semilla Coffee, our import partner for this beautiful lot.

 

MWIRIA

This lot comes to us from the Mwiria factory, located at the foot of Mount Kenya in the Embu region of Kenya. It was in 1964, when the factory was inaugurated, that the then Kenyan president named it "Mwiria" (a Kikuyu word meaning "huge") to commemorate a very old and large indigenous tree that was growing on the factory grounds. This tree is also a symbol in the struggle for independence from the colonial powers.

Today, more than 1050 coffee growers deliver their cherries of SL28 and SL34 varieties. On arrival, the cherries are rigorously sorted by hand and by floatation before being pulped. After a first fermentation, the coffee is washed, soaked again, then dried for 14-21 days on raised beds.

This bright and delicate coffee is a beautiful and classic expression of the Kenyan terroir. In the cup, notes of juicy blackberries as well as floral notes are rounded out by sweet flavors of key lime pie.
