Story
This lot is the result of the hard work of the Canales family, renowned producers in the Pueblo Nuevo region of Estelí, Nicaragua. The Los Delirios farm is now collectively managed by Daniel’s three sons: Donal, Milton, and Norman Canales. The family’s unwavering commitment to sustainability and quality has earned them international recognition, including first place at the Nicaragua Cup of Excellence in 2004.
Region
Pueblo Nuevo is located in the highlands of Estelí, Nicaragua, a region blessed with an ideal climate for coffee cultivation. The farms sit at an elevation between 1,000 and 1,650 meters above sea level. The climate is characterized by cool nights, mild days, and a distinct contrast between the wet and dry seasons. These conditions encourage the slow maturation of the coffee cherries, which contributes to the development of their sweetness and complexity.
Variety
This lot comes from a blend of different varieties grown at high altitude. This blend highlights the diversity and richness of the terroir, offering a balanced, vibrant, and harmonious profile.
Process
For this lot, the cherries were carefully processed using an 18-hour dry fermentation, allowing the beans to develop complex flavors before being meticulously washed. Following fermentation, the beans were delicately dried on raised beds, protected by shade netting to shield them from direct sunlight. This controlled drying process lasted between 18 and 22 days, ensuring a slow and uniform dry for optimal quality.
