Colombia Excelso Las Moras is a regional blend sourced from the renowned Pitalito area in Huila, Colombia, celebrated for its rich coffee heritage and optimal growing conditions. Cultivated at altitudes between 1700 and 1900 meters above sea level, this region provides the perfect environment for producing high-quality Arabica beans.
The blend features varieties such as Caturra, Bourbon Amarillo, and Colombia, each contributing unique flavors and complexity. Carefully harvested and processed, the Las Moras regional blend showcases bright, balanced acidity, a sweet, nuanced body, and a clear expression of Pitalito’s distinctive terroir, reflecting both tradition and quality.

Pitalito, located in Colombia’s Huila region, is renowned for producing some of the country’s finest specialty coffees. Its high-altitude terrain, rich volcanic soils, and favorable climate create ideal growing conditions. The area is primarily cultivated by small, family-run farms, often collaborating through cooperatives to maintain quality and sustainable practices.
Process
The processing of Colombia Excelso Las Moras follows a rigorous three-stage method designed to enhance both quality and complexity. Upon arrival at the processing station, the cherries are carefully washed and disinfected to remove green or immature fruit, along with leaves, stems, and impurities. This meticulous selection ensures that only the finest cherries move forward, setting a high standard from the very beginning.
Next, the cherries undergo a 24-hour oxidation phase prior to depulping. This step allows natural enzymes to stimulate the development of aromatic compounds, adding depth to the coffee’s profile. After oxidation, the beans are depulped and thoroughly washed to remove the mucilage, resulting in a clean, crisp cup.
