Our coffees are roasted in Montreal by our master roasters. We choose to do light roasts to preserve and enhance all the terroir specificities of each of our coffees. We have also chosen specific roasts for our espresso beans and for our filter beans to achieve an optimal result in your cup, depending on your preferred brewing method. It is this approach that allows us to offer you a remarkable cup, every time.
Our coffees mainly come from small producers who grow micro-lots. While they use few or no chemicals on their plots, organic certification is prohibitively expensive for them. Our goal is to support our producers as much as possible in improving their production, notably by ensuring them an income that will allow them to achieve an organic transition. This is the case for the Canales family, who are helping us fulfill our wish to make our Cielo the first ever organic coffee at Café Saint-Henri.
The difference is explained by the distribution channel and the type of packaging used for each format:
- Our 300g formats display a "best before" date. This format is distributed in grocery stores, a network where displaying the expiry date is mandatory for shelf stock management. To guarantee freshness for up to a year, this bag features an internal aluminum lining providing maximum protective barrier.
- Our 200g, 2lb, and 5lb formats display a roast date. These bags use a high-performance metallized structure for everyday consumption but are not designed for extended 12-month preservation. We therefore indicate the roast date to give you a direct and precise reference to the freshness of your coffee, and we automatically remove coffee that was roasted more than four weeks ago from our inventory.
Expert tip: In our opinion, the ideal consumption window for your coffee begins approximately two (2) weeks after the roast date. This resting period allows it to release a significant portion of the CO₂ accumulated during roasting and to begin fully expressing its aromatic profile. This optimal window extends to approximately sixteen (16) weeks after roasting. From this point on, oxidation gradually begins to alter the coffee's aromatic compounds. This does not mean that your coffee is no longer good to consume after sixteen (16) weeks. It remains perfectly drinkable, but its tasting notes may gradually become less intense and less defined.
Store your coffee beans in a clean, odorless, airtight container, away from light, heat, and humidity, in a cool, dry place.
For long-term storage, you can also freeze coffee beans, always in a perfectly airtight container. As with all frozen foods, avoid repeated freezing and thawing cycles: instead, divide your coffee into portions before freezing, so you only take out the amount needed.
