This community lot is grown by 16 small producers with organic certification living near Coipa. It returns to our menu for a fifth year. The growers of this lot are part of a program that aims to support and promote the quality and profitability of cherries sourced from the community.

La Coipa is a region of Peru known for its high quality coffee production. Located in the province of San Ignacio, in the Cajamarca region, La Coipa benefits from a climate and soil suitable for growing coffee. Coffee plants grow at high altitudes, which helps develop complex aromas and distinct flavors in coffee beans.

Mixed varieties can lead to flavor diversification in coffee beans. Each variety brings its own sensory characteristics, which can enrich the overall flavor profile of the coffee. In addition, the action of making mixtures of cherries from several producers, often with batches that would have a little less success in being sold as a single origin, still allows producers to have access to the premium that 'brings specialty coffee. This practice also ensures greater economic stability for producers, allowing them to improve the quality of their coffee, in addition to having a positive ecological impact.

With this washed process, the coffees were first evaluated separately at the collection center before being approved to be part of the batch. The chosen coffees spent a short period of fermentation in the cherry before being pulped. They fit a taste profile called “Fruta Madura” (ripe fruit), which features aromas of ripe dark fruits and lots of sweetness.
