Canales Family, Espresso

The Canales family story began in 1958, when Daniel Canales purchased an abandoned farm in Pueblo Nuevo, Estelí, Nicaragua. He restored the land and gradually shifted production toward organic coffee, a choice that was rewarded in 2004 when his farm won first place in the Nicaragua Cup of Excellence. This commitment to sustainability and quality laid the foundation for the family's success. Today, Finca Los Delirios is managed by his three sons, Milton, Donal, and Norman, who together cultivate Typica, Caturra, and Bourbon varieties on different plots. Their collaboration reflects a desire to perpetuate the finca's legacy and promote sustainable coffee cultivation, maintaining high standards and contributing to the development of quality coffee production in the region.

Pueblo Nuevo, in the Estelí Highlands of Nicaragua, offers ideal conditions for coffee, with altitudes ranging from 1,000 to 1,650 meters. Cool nights, mild days, and a clear distinction between wet and dry seasons promote slow ripening of the cherries. This process allows the beans to fully develop their sweetness and complexity, contributing to the region's production of aromatic, high-quality coffees.

This batch is composed of different local varieties to highlight the richness of this terroir. The result: a cup with a velvety body, delicious notes of dark chocolate, hazelnut and a syrupy finish reminiscent of honey.

For this batch, the cherries underwent an 18-hour dry fermentation to develop complex aromas, followed by a thorough washing. The beans were then gently dried on raised beds, protected from the sun by a shade net. This controlled drying, which lasted between 18 and 22 days, allowed for slow and uniform maturation, ensuring optimal quality and fully revealing the coffee's aromatic profile.
