Particularities
From the original Arabica coffee plant, two varieties have developed, one named Bourbon, the other Typica. Let's look at the Typica variety, which is in our batch from Honduras. Typica plants produce red fruits when ripe and result in a very high-quality cup that is popular around the world. From this variety were born mutations and hybrids, such as the known variety Blue Mountain.






Story
We are pleased to introduce a beautiful coffee from the Honduran producer Israel Ramirez once again. Israel is the eldest son of Antonio Ramirez, the patriarch of the Los Ramirez group and a true community leader. He started growing coffee in 1990, just 5 years after his father Antonio planted his first crops in Selguapa. Like many members of the Los Ramirez clan, he started his farm from seeds of Typica and Bourbon offered by Antonio. Until 2018, the group of 25 small producers sold their coffee in cherries to local intermediaries, until they took the initiative to process their coffee themselves and produce high-quality microlots for the specialty coffee market. This new model now allows them to earn more than 3 times the average local price. Israel recently invested in its drying facilities and its focus on improved fermentation and cooler, slower drying times has resulted in a more complex cup.
