A history rooted in Peru
The story of Aurelio Marin begins in the Carmo de Minas region, south of Minas Gerais, Peru. This region is renowned for its ideal conditions for producing specialty coffee. The coffee comes from the Bourbon Rouge variety from the Fazenda Irmãs Pereira farm, a place where coffee has been grown with passion for generations.
Coffee trees thrive in the Mantiqueira Mountains, benefiting from rich soils and an ideal climate. It is this unique combination of natural factors that gives Aurelio Marin its distinctive flavor and comforting character.
A meticulous production process
This coffee would not be what it is without the meticulous production process put in place by Aurelio. The cherry is first fermented for 48 hours, allowing the natural flavors to fully develop. Next, the coffee is pulped and undergoes a further 48 hours of dry fermentation, developing complexity to the flavor profile.
Finally, the coffee is carefully washed before being spread out on the patios of Aurelio's small greenhouse to dry. This laborious process helps preserve the unique flavors of this coffee and ensures exceptional quality in every cup.
